Lavender & Earl Grey London Fog

Did you know that this British sounding tea actually got it’s start on the Canadian west coast in the 1990’s! It was apparently invented by a lady named Mary Loria from Vancouver and I am glad she did because it is one of my favourite tea, especially combined with lavender syrup. The combination of warm milk, lavender syrup and bergamot feels Like a warm hug with a gentle caffeine kick. This tea latte is perfect for cold winter mornings or an afternoon pick me up.

What is a London fog? Traditionally a London Fog is an earl grey tea latte with foamy milk and vanilla extract or vanilla syrup. For this recipe we substitute the vanilla with lavender syrup, it’s a small change but a whole new experience!

TIPS:

-If you want nice foamy milk you can use a frother. Warm up the milk on a stove top or in the microwave and use a mini frother or if you have a frother integrated to your coffee machine, that is ideal. If you have neither of those you can pour the warm milk in a mason jar and shake it like you mean it! This cost effective method works great too.

-Prepate your lavender simple syrup in advance so you have it on hand to enjoy with all of your favourite treats.

-For a sugar free option you can either make the syrup with the sugar substitute “allulose” when making your lavender simple syrup or add 1 /2 to 1 tsp of lavender buds to your loose leaf earl grey tea.

PREPARATION TIME: 10 minutes

INGREDIENTS:

-1 Earl Grey tea bag or 1 TBSP loose leaf Earl Grey Tea

-1/2 Cup of hot water

-1/2 Cup milk of your choice

DIRECTIONS:

-make the tea: Steap you tea bag in hot water for 3-5 minutes. Adjust strenght to your taste.

- froth your milk: Warm up the milk on low heat and froth with your method of choice.

-sweeten: Stir sweetener in with steeped tea.

-add milk: Top off the tea with the warm frotted milk and add a sprikle of lavender buds for decoration.
